A reception manager at one of Aberdeen’s top hotels has recently returned from a prestigious scholarship in Switzerland.

Gabor Petia (33), reception manager at The Aberdeen Skyways Hotel, attended a week-long course on leadership in the workplace as part of the Hospitality Industry Training (HIT) Scotland Scholarship at the École Hotelière Lausanne in Switzerland.

Originally from Hungary, Gabor was one of just 14 scholars selected for the week long programme that focused on leadership and management in the hospitality sector.

Gabor explains,

“The whole HIT Scotland experience was incredible and I was honoured to be a part of it.

“I met a number of inspiring individuals and there was a great sense of camaraderie throughout the week. In the evenings we were able to relax and enjoy each other’s company, like a sort of working holiday.”

Throughout the scholarship, Gabor learned a number of skills that will help him become a more effective manager in his post at The Aberdeen Skyways Hotel, including how to motivate his team to perform to the best of their abilities.

He says,

“The most important thing I learned on the scholarship was that being a manager and being a leader are two very different things. A manager is focusing on tasks and schedules, but a leader’s main focus is people.

“I often meet with individuals in the industry who work in hospitality just to pay the bills and have absolutely no passion. I believe that the hospitality industry has no place for this attitude as it has an immediate impact on the level of service.

“The experience reaffirmed my belief that it’s not a mistake to aim for perfection. Striving towards a 100% success rate can bring out the best in a team and encourage teamwork.

“Luckily, our reception team already performs very well, but there’s always room for improvement. I’m looking forward to sharing my experiences so that we continue to focus on the guests, their individual needs, and ways in which to give them a unique experience.”

Gabor also realised that sometimes the biggest hindrance in any professional’s work is their own outlook, and that it can be important to step back and re-evaluate one’s priorities in the workplace.

He says,

“The daily pressure at work can mean we sometimes forget the bigger picture. We can focus so much on resolving the issues directly in front of us that it can hold us back from delivering the level of service we are capable of.

“Getting away from daily routines and receiving professional tutoring in how to excel in hospitality is a fantastic experience, and a real motivator to perform well. It reminded me why I entered into the hospitality industry in the first place.”

Gabor, who has worked at The Aberdeen Skyways Hotel since 2011, has long been a valued member of the team. General manager, Alison Christie says,

“Since Gabor returned from his HIT Scotland Scholarship he has been re-energised and really focused on improving the customer experience, putting into place his learnings as soon as he stepped back through the door.

“Being awarded a scholarship is a really fantastic achievement, and we were thrilled that Gabor was selected earlier this year. He is a credit to the hotel, and we look forward to working with him for many more years to come.”

Andrew’s Spitfire Burger

When Andrew Brown, a Merchant Navy engineer from Peterhead, visited the Taste of Grampian Festival at Thainstone centre in June, the last thing he thought he would be crowned was The Aberdeen Skyway Hotel’s very own burger king…and it was all down to a spam fritter.
The Aberdeen hotel was a prominent feature at the local foodie festival, offering samples from its latest aviation themed burger menu.

But what The Aberdeen Skyway Hotel was really looking for was a new invention for the menu, created by imaginative festival goers.

From chocolate to yoghurt, fruit to pigs cheeks; some of the entries could be considered unpalatable. For Andrew (28), his Spitfire creation consisted of an Aberdeen Angus burger, topped with a spam fritter, habenero salsa, Swiss cheese, rocket, chard salad and a hefty spread of chilli mayonnaise. The chefs carefully selected Andrew’s creation because of its creativity and well balanced flavours.

Andrew explains:

“I couldn’t believe it when the hotel called me to say my recipe had won – it was actually my friend who persuaded me to enter, knowing my love of a good burger. I’d never made the recipe but I knew the ingredients would marry up well.

“I was lucky enough to spend an afternoon with one of the chefs creating my burger and when I finally got to try it, it was every bit as amazing as I’d imagined. The key is in the name though with a definite kick coming from the chilli.

“It’s definitely the most unusual competition I’ve entered and to have my dish on the menu is quite an accolade, even if I do have to put up with my friends calling me the burger king from now on!”

And it would appear that Andrew is not alone in his tastes as the burger has become a huge success since it has been on the menu.

Alison Christie, general manager at The Aberdeen Skyway Hotel, says:

“Guest feedback and input is hugely valuable to us. We strive to ensure that every visitor experience is a positive one; an ongoing achievement reflected in our recent Trip Advisor Certificate of Excellence award.

“We know that the Taste of Grampian Festival attracts keen foodies from the area and decided what better way to develop a new, creative menu item? Thirty people entered the competition and although there were some unusual ingredients, the majority were superb.

“We added Andrew’s Spitfire to the menu at the start of July, giving summer visitors an option to try something unique during their visit. The competition has been such a success that we may look to do it again in the future.”

The Spitfire burger will remain on the menu until the end of August and is priced at £14.

Hornblower’s was opened in 2010 by Alex and Ruth Grahame, and specialises in locally-sourced seasonal food with an emphasis on seafood, .

An award-winning Aberdeenshire fish restaurant and takeaway has become 100% Scottish sourced for all its produce after a new deal was struck that guarantees the serving of Scottish poultry in the north-east.

For over two years, Alex Grahame, who owns Hornblower’s in Gourdon with his wife Ruth, has been campaigning to find a reliable and certified Scottish supplier for poultry.

The restaurant is committed to 100% Scottish sourcing, receiving daily deliveries of fish from either Gourdon or Peterhead harbour, fresh meat from The Store and even salt for its chips from the Hebridean Sea Salt company.

Despite this, affordable high welfare Scottish chicken was always missing from the Gourdon menu as a result of the country’s leading suppliers being tied in with exclusive supermarket deals. This shortage of chicken available for independent restaurants has meant that Hornblower’s has had to source its poultry from further afield.

But now, thanks to help from supplier Braehead Foods and Richard Lochhead MSP, Scottish cabinet secretary for rural affairs, food and environment, an understanding has been formed that will see a proportion of red tractor assured poultry from Blairgowrie made available by 2 Sisters Food Group in Glasgow. This will allow restaurants like Hornblower’s to dish up the nation’s chicken to its customers.

Alex Grahame said:

“This announcement is fantastic news for us and really signals an end to over two years of frustration in terms of countless attempts at trying to source affordable, Scottish, high-welfare chickens.

“The power of the supermarkets is really there for all to see and I’d like to thank Braehead Foods and Richard Lochhead for their role in lobbying this campaign. To have a guarantee of Scottish poultry for inclusion in our dishes is really a victory for every independent restaurant in the country and highlights that change can happen for the greater good.

“We’re delighted to now be in a position to add Scottish poultry to our menu and I’m sure our customers will be delighted to hear that the final piece in our sourcing puzzle has been placed. As a restaurant that is committed to 100% Scottish sourcing, from our local fish to our Scottish drinks and even our ice-cream, to finally get over the line with our promise is a great feeling and one that we’ll look to continue to enhance with the addition of new produce in the near future.”

A 650 sq ft takeaway, a 2,500 sq ft ice cream parlour along with two other restaurants, including The Pier Bistro is also part of the plans.

Plans for a new Aberdeen Beach restaurant development have been given the green light.
The blueprint for the esplanade site of the former Jimmy Chungs and TC Fish restaurant was submitted late last year by award-winning restaurant and takeaway Hornblower’s, in partnership with site owner Rossnow Leisure and TCD Architects.

The site has lain disused since the start of 2014 but has now been granted the required planning permission to be transformed into a bistro-style restaurant and takeaway along with a 1950s-style ice cream parlour.

The 250 seater, 16,000 sq ft restaurant will occupy two floors and will also include various terracing and heated outdoor seating areas, providing unrivalled sea views. It will be accompanied by a neighbouring 650 sq ft takeaway and 2,500 sq ft ice cream parlour.

The restaurant, takeaway and ice cream parlour will be operated by Hornblower’s, with two other restaurants, including The Pier Bistro, also forming part of the complex.

The planning approval follows the recent decision made by Hornblower’s owners Ruth and Alex Grahame to make their current Gourdon premises available for lease. Hornblower’s has operated from the coastal village since 2011, with its locally sourced dishes and its stunning, picturesque setting proving popular with locals and visitors from throughout the world.

Owner Ruth Grahame is delighted that plans for the Aberdeen Beach development have been given the go-ahead.

She said:

“Today’s announcement is the result of months and months of hard work so we’re thrilled that our plans for Aberdeen Beach have been given the green light.

“When the site came on the market, it immediately grasped our imagination. In terms of location, size and the stunning view out across the sea, it really did tick so many boxes for us and we’re delighted to now be in the position to forge ahead with transforming our dream into a reality.

“Many of the things we’re known for through our time in Gourdon will be replicated in our new home in Aberdeen. We’ll continue to use the best produce from sea and field and we’re committed to 100% Scottish sourcing; an important part of our business that we will never lose sight of.

“The addition of the ice cream parlour adds another dimension to Hornblower’s and I’m sure will be just as popular as our signature dishes. We think a combination of the beach, fish and chips and ice cream sounds great and we can’t wait to let customers, both old and new, experience what we have to offer.”

Construction work on the site is set to begin later this year.

Thistle Aberdeen Altens hotel has been inducted into the TripAdvisor Hall of Fame after securing the review site’s Certificate of Excellence for five years in a row.

And there have also been celebrations at the chain’s two other hotels in the Granite City – Thistle Aberdeen Airport and Caledonian by Thistle – after they were also awarded the Certificate of Excellence status after receiving consistently high reviews from guests.

The Certificate of Excellence is awarded by TripAdvisor – the world’s most renowned peer review website – and has been running for the past five years.

Recipients are identified by a TripAdvisor algorithm that factors in a variety of user generated content.

This content includes review ratings, overall rating and the quantity and frequency of reviews. Hotels must maintain a rating of at least four out of five, have a minimum number of views and have been listed on Trip Advisor for at least 12 months.

The Hall of Fame Award is a new initiative to mark the fifth anniversary of the Certificate of Excellence scheme, and is being presented to those hotels that have made the grade for five years running.

Thistle Aberdeen Altens manager Kris Manship says:

“This award shows that we are consistently providing an excellent experience for guests. It is testament to the hard work of the team in the hotel, who are very committed to ensuring that we not only provide great service but that the experience is the same for each and every guest.”

General manager at Thistle Aberdeen Airport Alison Christie says staff at the three hotels are delighted with the hat-trick. She adds,

“TripAdvisor is the world’s most influential review site. It puts the power into the hands of the consumer.

“Positive TripAdvisor ratings are hugely important and they recognise and promote the great service and experience which guests have at our three Aberdeen hotels. A Market Metris survey showed recently than 93% of global travellers say their decisions are influenced by online reviews. It’s ‘word of mouth’ via the keyboard or touch screen and reviews benchmark us against all our peers.

“All three of our hotels have received Certificates of Excellence for several years running and they are another element of our strong credentials to mark us out in a highly competitive market.”

President of TripAdvisor for Business, Marc Charron has previously said of the Certificate of Excellence scheme,

“By putting a spotlight on businesses that are focussed on delivering great service to customers, TripAdvisor not only helps drive an improvement to hospitality standards around the world but also gives businesses both large and small the ability to shine and stand out from the competition.”

Recent TripAdvisor comments about Thistle’s three Aberdeen hotels include:

Caley Afternoon Tea 2

Afternoon tea is an institution at the Caledonian by Thistle hotel in Aberdeen.

Foodies can have their cake and eat it again and again if they are successful in securing a plum job created by an historic Aberdeen hotel.

The position at The Caledonian by Thistle does not come with a salary, but successful applicants who make it onto the afternoon tea taste test panel will be rewarded with as much tea, sandwiches and cake as their stomachs will allow.

The city centre hotel, which just like afternoon tea dates back to Victorian times, is convening the panel of expert tasters this weekend as part of its efforts to revamp its menu.

Guests have been making suggestions on what should appear on cake stands via social media for several weeks, and chefs will present the shortlisted options on Sunday afternoon (July 5).

A number of guests have already been recruited to join the panel, but hotel manager Jane Bourque says there is room for more people to get involved to ensure they have feedback from tasters with different palates.

Those already selected were asked to join on the basis of the suggestions they made for cakes and sandwich fillings to appear on the new menu.

Jane says:

“Some have been very traditional along the lines of egg and watercress sandwiches, while others have really pushed the boundaries with suggestions like strawberry and tequila jam.

“Our chefs have been listening very carefully and can’t wait for our taste panel to give them feedback after all the different cakes and sandwiches have been tested. We do have some openings left on the panel, and ideally we are looking for someone who has a discerning palate and not just a sweet tooth as they are going to be required to give feedback on both the cakes and the sandwiches.

“Afternoon tea has always been an integral part of our heritage at The Caley – we were serving it long before it became trendy again – and it is a real experience for guests, complete with vintage China and traditional cake stand. We felt that it was important to involve customers in revamping the menu as they are the real experts in what makes a great afternoon tea.”

Hoteliers from across Aberdeen and Aberdeenshire are banding together to launch a £20,000 fund-raising campaign to help thousands of local families affected by dementia.
Members of Aberdeen City and Shire Hotels’ Association (ACSHA) want to raise the cash for the region’s first dementia resource centre, which will open its doors in Aberdeen later this year.

The campaign is being spearheaded by Mike Edwards of the city’s Mariner Hotel.

The need to have a dedicated resource centre for people with dementia and their families is a cause particularly close to his own heart. His father, David, was diagnosed with vascular dementia in 2008 – aged just 59.

David, who had a long and successful career in the hospitality sector, is one of almost 7,500 people in the north east who are currently living with some form of dementia.

Since his father’s diagnosis, Mike has discovered that many other people connected to ACSHA have also been touched by the condition in some way. He asked that Alzheimer Scotland be considered as ACSHA’s adopted charity for 2015, and found wholehearted support amongst his peers.

Mike explains,

“My father is very much respected in the hospitality community, having worked in many hotels in the city and in the shire, including The Tufted Duck in Fraserburgh and The Commodore before opening the popular Atlantis Restaurant in 1979.

“He ran the Mariner from 1995, right up until his forced retirement due to ill-health. So many people, including my fellow hoteliers, would ask after him and it was through talking to others that I discovered how many people I knew had also been touched by dementia.

“When I heard that Alzheimer Scotland was opening a new resource centre, I knew right away just how valuable something like this could be to so many families in desperate need of support and guidance as they adjust to living with the condition.

“We will be fund-raising throughout the year, and hope that we will be able to hand over £20,000 by the time we stage our next AGM in April. We’re still working on our plans, but I know that in the past my fellow hoteliers have been very inventive with ideas and generous in their support.”

Last year, ACSHA adopted the Teenage Cancer Trust as its nominated charity in recognition of the support it had given Inverurie teenager Abigail Cox – daughter of hotelier Gary Cox – as she battled against bone cancer. It set a £20,000 target but went on to generate £45,000 for the charity.

The new Aberdeen Dementia Resource Centre will be based in King Street and will formally open in September. It will serve as a drop-in for anyone seeking advice about dementia, a meeting place for people with dementia and their families and a base for Alzheimer Scotland staff.

There are currently around 90,000 people across Scotland who have been diagnosed with some form of dementia, including around 3,500 under the age of 65. In Aberdeen alone there are almost 300 people under the age of 65 living with dementia.

Aberdeen-based Alzheimer Scotland Dementia Advisor, Sarah Geoghegan is full of praise for the initiative being undertaken by ACSHA. She adds,

“Dementia affects many people and families across Aberdeen City and Shire. It affects everyday life and can be a great challenge to both those people affected and their loved ones. We want to support people with a diagnosis to live independently for as long as possible and maintain a full and active life.”

“The new resource centre will be a vital source of information and support for people with dementia and their families and I thank all those who are making this possible, including everyone at ACSHA. It is fantastic to have their support and we look forward to working with them in the months ahead.”

In addition to supporting the fund-raising, many ACSHA members are also adding their weight behind the Dementia Friends initiative. This is a scheme that aims to make all association venues more welcoming and hospitable for those with dementia and their carers.

A number of fund-raising events have already been arranged, including ACSHA’s participation in the annual Memory Walk at Hazelhead Park in Aberdeen on September 13. A fund-raising page has also been set up at www.justgiving.com/ACSHA

TOURISM AWARDS DINNER115The clock is ticking down on a chance for tourism operators across Aberdeen and Aberdeenshire to shine in a national awards scheme.
The deadline for entries in the Aberdeen City and Shire Tourism Awards (ACSTA) is on June 19, and a final call is being sounded for businesses and individuals to come
forward.

All those who win one of the 14 categories up for grabs in ACSTA will automatically be entered into the Scottish Thistle Awards 2016, in which they will go head to head with other contestants from all over Scotland.

ACSTA chairman Iain Watson says the area has a very high quality tourism sector, and local operators should relish the opportunity to help put a national focus on what Aberdeen and the wider region has to offer.

He adds,

“The fact that we are now a regional final for the Scottish Thistle Awards has really piqued the interest of tourism businesses. We have had a steady flow of entries coming in across all categories, and we expect that number to increase as the deadline approaches.

“Entrants can see there are potentially huge benefits to taking part in ACSTA. If they win their category, they will gain national exposure and the opportunity to demonstrate to the whole country the very high standards to which they operate.

“We know that we have a superb tourism offering here in the north east and this is a fantastic opportunity for us to shout about it. I have no doubt that our local winners will go on to achieve great results in the national scheme.”

The awards categories have been updated to tie-in with the Scottish Thistle Awards. There are categories for accommodation providers, eateries, visitor attractions and events, as well as accolades for individuals who go above and beyond to make sure visitors have a memorable experience.

Hospitality Hero is open to anyone who is working on the front line from tourism guides to bus drivers, while the Ambassador and Young Ambassador awards are for those who show a real passion for the tourism industry.

The organisation which markets Aberdeen as a leisure and business destination – VisitAberdeen – has scooped two major awards for its performance.

VisitAberdeen won a marketing award from the China Outbound Tourism Research Institute (COTRI) for its Chinese language website, social media presence and attendance at trade fairs both in person and via its partner CBN.

The destination marketing organisation also won the accolade of “The Most Effective Stand For Doing Business” at VisitScotland’s recent Expo.

VisitAberdeen’s Tourism Executive Jenni Fraser was on hand in Bejing to pick up the Chinese Tourist Welcome Award in marketing at the COTRI awards, which coincided with the China Outbound Travel and Tourism Market (COTTM) Fair.

COTRI is the world’s leading independent research institute for information, training, quality assessment, research, and consultancy relating to the Chinese outbound tourism market.

VisitAberdeen’s chief executive Steve Harris (pictured) says,

“We launched a Chinese version of our website earlier this year in a bid to attract a share of the $128 billion China spends every year on overseas leisure and business tourism. We wanted to be ahead of the curve on targeting this highly lucrative market. The Chinese are the biggest overseas spenders in the world, spending on average 50% more than Americans when they are on vacation.

“With a total population of 1.357 billion, only 10m of China’s residents can speak English. With forecasts suggesting 500 million Chinese people will travel overseas in the next 15 years, we believe that it is critical to promote the city as a leisure and business destination to the Chinese in their native language. Receiving this award when we’ve only been working on this project for such a relatively short space of time is especially pleasing.”

The award for “The Most Effective Stand For Doing Business” was presented to VisitAberdeen at the recent VisitScotland Expo held in Aberdeen.

Expo provides a platform for companies and organisations with a Scottish tourism product to showcase products and services to potential global buyers from all sectors.

The Visit Aberdeen and Aberdeenshire Pavilion which was created in partnership with Aberdeenshire Council hosted over 525 prearranged business meetings with buyers from across the UK and abroad. The stand was made up of several local partners including Ardoe House Hotel, Banffshire Coast Tourism Partnership, Visit Royal Deeside, Thistle Hotels and Secret Malts of Aberdeenshire.

Steve Harris continues,

“Expo gave us a collective opportunity to create personal relationships with genuine buyers and decision makers, many of whom had a low level of knowledge of our area prior to Expo. Personal interaction and the chance to convey the passion of our partners for the beautiful area we live in leads to long lasting business connections, leading to positive business outcomes for all.

“The on stand meetings were just the start, we now need to follow up on these leads to bring more groups of travellers to Visit Aberdeen and Aberdeenshire. Picking up this award shows we’re leading the way in maximising the business opportunities these types of trade shows bring for the area.”

Jean Ryrie has worked at the Thistle Aberdeen Airport for 39 years.

The hospitality industry is notorious for high staff turnover; employees often flit from job to job without hesitation or loyalty. But Thistle hotels in Aberdeen are bucking the trend.
Thistle Aberdeen Airport hotel boasts an experienced team that have stuck together through thick and thin, including a core team that has over 260 years’ experience in the hotel – that’s 21 years longer than the United States of America has been in existence.

Leading the pack is executive head housekeeper Jean Ryrie, who has been a valued member of the team for 39 years.

Recently nominated for housekeeper of the year at the Scottish Hotel Awards, her passion for greeting colleagues and guests with a smile has never faltered.

Jean says,

“Working for Thistle is a fantastic experience. If it wasn’t, I would never have stayed so long. The staff here are like one big family, and we all get on really well. That sense of camaraderie really makes the working day fly by.”

Always willing to go the extra mile for those staying in the hotel, Jean has been known to go above and beyond to ensure her guests are safe and happy during their stay.

Jean remembers,

“One guest that sticks in my mind was a man who called the housekeeping office to ask for extra blankets. It’s not an unusual request so I brought some up, but when I arrived at his room I found him ill in bed with an awful temperature.

“I asked reception to call for a doctor, and kept an eye on him until one arrived.

“One time I visited his room and he had gotten so much worse that I couldn’t wait for the doctor any longer – I called for an ambulance, and he was rushed to hospital.”

The guest was later diagnosed with septicaemia, a severe form of blood poisoning that could have led to fatal complications had Jean not taken action.

She continues,

“I didn’t think twice about calling the ambulance. If a guest is in need, I always feel it is my duty to do whatever I can to help them, and I know my colleagues feel the same way.”

Jean’s caring nature is not just reserved for the hotel’s guests, meaning that she has a hard-working and dedicated team that have stayed with her during her career in the hotel. Ensuring that they are treated and trained well, Jean makes sure everyone in the housekeeping department feels a valued member of the team. 

Alongside new recruits, Jean’s hard-working team includes Margaret Esson (31 years), Camilla Jones (26 years), Brenda Paterson (24 years), Emma Singer (24 years), Audrey Western (23 years) and Fiona Cruickshank (13 years).

General manager Alison Christie says,

“I am absolutely thrilled that so many of my colleagues have chosen to stay at the Thistle Aberdeen Airport for so long. Having such experienced staff means that everything in the hotel runs smoothly – there are very few situations they haven’t come across before. We really are a well-oiled machine.”

That dedication to the job is not just reserved for the housekeeping department, however, and many other teams in the hotel boast extremely experienced staff who have stayed at the hotel throughout their careers.

Food and beverage operator Christina Grant has been a member of the catering team for 34 years, working with breakfast supervisor Lesley Martin and kitchen assistant Ruby Henderson, who have been there for 30 and 29 years respectively. Head chef Richard Simpson has been overseeing the kitchen for a decade.

Alison adds,

“We often see guests returning to the Thistle Aberdeen Airport every time they visit the city. They enjoy seeing the same faces when they check in – it’s like coming to a home from home.

“The continuity guests get from visit to visit means that they always know that they’ll receive top quality service, and I am delighted that we are able to provide that.”

Thistle has three hotels in Aberdeen – The Caledonian, Aberdeen Airport and Aberdeen Altens. There are 446 bedrooms across the three venues, and each has conferencing and banqueting facilities.
